Greta’s Chocolate Peanut Butter Pudding Cups

3 packages vanilla pudding – cook-type
3 tablespoons cornstarch
1 cup smooth peanut butter
pre-made chocolate dessert shells

Prepare vanilla pudding according to package directions, first mixing cornstarch with the dry pudding mix. Mix in the peanut butter to the cooked pudding.

Add to the chocolate shells and allow the pudding to set up.

Variation: set aside 1/4 of the pudding mixture, stirring in melted chocolate chips. Swirl this into the peanut butter mixture after adding it to the shells.

Jack and Carol’s Sweet Potato Casserole

Make topping first and chill:

1 cup brown sugar
1/3 cup flour
1 cup chopped Pecans
1/3 cup melted butter

Mix to crumb consistently. Chill. (Sprinkle on top of potatoes when prepared)

Heat oven to 350 degrees.

Make Filling:

4 cups Sweet Potatoes
1 tsp. vanilla
2 eggs, beaten
1 cup white sugar
½ cup melted butter

Mix sweet potatoes with the last four ingredients. Place in casserole dish, sprinkle with topping and bake 30 minutes.
