Scalloped Potatoes with Meat

5 potatoes
Flour
4 Chip steaks
Salt (a little on each layer)
1 big onion
1 stick butter
Milk
Pepper

1. Fry steaks till done

2. Slice meat in small pieces & chop onion (small). Set aside.

3. Peel potatoes & slice in about 1/2 inch slices. Set aside.

4. Melt butter.

Start laying of potatoes, some onion, a little flour on each potato & spoon on a little butter, add some chopped steak, till everything is gone. Then warm milk in the same pan as the butter. Pour over all the potato mixture. Cover and cook on low stove till potatoes are done, about 45 minutes. (Extra: you can add some corn to the potato layers).

Maddy’s Mini Meatloaf

2 Tbsp. packed brown sugar
1/2 cup Original Bisquick mix
1/4 cup chopped onion
1/2 cup ketchup
1 lb. lean ground beef
1/4 tsp. pepper
1 egg

1. Heat oven to 450 degrees. In small bowl, stir ketchup and brown sugar until mixed; reserve 1/4 cup for topping. In large bowl, stir remaining ingredients and remaining ketchup mixture until well mixed.

2. Spray 13×9 inch pan with cooking spray. Place meat mixture in pan; pat into 12×4 inch rectangle. Cut lengthwise down center and then crosswise into sixth to form 12 loaves. Separate loaves, using spatula, so no edges are touching. Brush loaves with reserved 1/4 cup ketchup mixture.

3. Bake 18-20 minutes or until loaves are no longer pink in the center and meat thermometer in center of loaves reads 160 degrees.

Greta’s Chocolate Peanut Butter Pudding Cups

3 packages vanilla pudding – cook-type
3 tablespoons cornstarch
1 cup smooth peanut butter
pre-made chocolate dessert shells

Prepare vanilla pudding according to package directions, first mixing cornstarch with the dry pudding mix. Mix in the peanut butter to the cooked pudding.

Add to the chocolate shells and allow the pudding to set up.

Variation: set aside 1/4 of the pudding mixture, stirring in melted chocolate chips. Swirl this into the peanut butter mixture after adding it to the shells.

One Dish Chicken

1 pkg. Chicken breast
Olive or Corn Oil
Garlic salt
Black Pepper
Potatoes, peeled & cut into chunks
Carrots, peeled & cut into chunks
Onion, peeled & sliced

Skin chicken breast. Cover bottom of Dutch oven with oil, about 1 Tbsp. On top of stove fry chicken until about half done and slightly browned. Take chicken out of pan. Put potatoes, carrots and onion in the hot oil and stir until browned, completely coating in the hot oil. Place chicken back in pan on top of vegetables. Sprinkle with garlic salt and pepper. Add 2-3 Tbsp. water. Bake in 350 degree oven about one hour.
