Greta’s Chocolate Peanut Butter Pudding Cups

3 packages vanilla pudding – cook-type
3 tablespoons cornstarch
1 cup smooth peanut butter
pre-made chocolate dessert shells

Prepare vanilla pudding according to package directions, first mixing cornstarch with the dry pudding mix. Mix in the peanut butter to the cooked pudding.

Add to the chocolate shells and allow the pudding to set up.

Variation: set aside 1/4 of the pudding mixture, stirring in melted chocolate chips. Swirl this into the peanut butter mixture after adding it to the shells.

One Dish Chicken

1 pkg. Chicken breast
Olive or Corn Oil
Garlic salt
Black Pepper
Potatoes, peeled & cut into chunks
Carrots, peeled & cut into chunks
Onion, peeled & sliced

Skin chicken breast. Cover bottom of Dutch oven with oil, about 1 Tbsp. On top of stove fry chicken until about half done and slightly browned. Take chicken out of pan. Put potatoes, carrots and onion in the hot oil and stir until browned, completely coating in the hot oil. Place chicken back in pan on top of vegetables. Sprinkle with garlic salt and pepper. Add 2-3 Tbsp. water. Bake in 350 degree oven about one hour.

Mus-go Beef Balls

Gotta explain “bout th’ name “mus-go”. That means anything in the ice-box thet you’re too pore to throwaway an’ to proud too set for company. Jest fancy it up and call it “mus-go” and then feed it to family or company.

1 pound left over beef (roast or steak)
2 cups fine rolled crackers or bread crumbs
Lemon and Onions
Milk (or gravy)
2 eggs
Butter
Salt and pepper

Take the cold left over beef – cut off all gristle and bone and hash it fine. Combine with the crackers or crumbs, milk or gravy to moisten, eggs, season to taste with salt, pepper, lemon and onions.

Let it stand till it swells, and then make it into patties or rolls.

Brown in deep fat – consisting of 1/2 butter.

Pork Chop Casserole

6 Pork Chops
sliced potatoes
2 cans Golden Mushroom or Cream of Mushroom soup
1 cup milk
1/4 cup butter
salt
pepper

Brown pork chops and place in a casserole dish. Layer sliced potatoes over pork chops. Add soup, milk and butter. Top with salt and pepper.

Bake at 350 degrees for 30 minutes or until tender.

Breakfast Casserole

1 dozen eggs
1 can creamy onion soup
1 cup cheddar cheese
1 8-pkg. crescent roll
1 lb. sausage

Spray 9×12 pan with cooking spray. Spread rolls out thin on bottom of pan and half way up sides. Make sure there are no holes. Add cheese, add cooked and drained sausage. Mix eggs and soup together and pour over sausage. Bake at 350 degrees for 40 minutes. Half the recipe if you want to and use a smaller pan.
